Fried Egg

Ingredients
INGREDIENTS

3 Fresh Eggs (room temp.)

Vegetable Oil

1 Chilli (thinly sliced)

1 Spring Onion(thinly sliced)

Oyster Sauce

  1. Crack 3 eggs into a bowl.

  2. In a wok pour enough vegetable oil to shallow-fry the eggs (about 1½ cup) on medium heat. Use a spatula to swirl the oil around the wok so that the side is coated.
  3. When the oil is hot enough, gently pour the eggs into the hot oil.

  4. Spoon the hot oil onto the top of the egg, while not disturbing the eggs.

  5. Slightly jiggle the wok; if the eggs slide, the bottom is set.

  6. Slide
the spatula to the bottom of the eggs, lift the up; bring to the side
of the wok, flip over, and let them slide into the oil.

  7. Fry for another few seconds, the eggs will be done. The eggs will be crispy on the outside.

  8. Remove and drain off excess oil. Drizzle oyster sauce on top of the eggs. Garnish with chilli and spring onion.

Here's a tip for all you people out there when you're preparing a pizza. Make sure that after the tomato paste is spread, put half your cheese on the pastry then put all your toppings before adding in the rest of your cheese. Then when the pizza is done, everything will stick into place (like a standard Pizza Hut pizza, haha!) and not drop all around when it's being eaten.

/me dislikes american pizza

/me loves italian pizza =D

A normal magherita will please me a lot

Crispy pastry ftw~

PUMPKIN SOAP(SOUP)

Ingredients:
Pumpkin
Potato
Vegetable stock
Milk

  1. Cut your pumpkin and potatoes in medium blocks. (preferably 1:1 portion. would be better to experiment on your own ^^) This makes it easier to cook and steam them.

  2. Throw them into a steamer (I use conventional method) and leave it around 20mins to 30mins till they are cooked.

  3. Move the potatoes and pumpkin into a blender and start blanding them. Add as much milk as you want, depending on how watery you want them.

  4. Break a vegetable stock or two into the blender. Make sure you crush them properly before putting it in. You wouldnt want lumps of them in your soup =)

  5. After blending the concoction, pour them into a saucepan and heat it, stirring continuously, as you dont want to burn the bottom

  6. Wallaa, you are done =) Grate some parmesan onto it to add some flavouring ^^

Chicken & mushroom risotto

Ingredients

2 chicken breasts, chopped roughly into small pieces
15g dried mushrooms
1 litre hot chicken stock
25g butter
1 medium onion, very finely chopped
300g Carnaroli or risotto rice
100ml dry white wine
200g fresh mushrooms cleaned and sliced (can be button but the dark flat mushrooms give a deeper flavour).
A little salt and lots of freshly ground black pepper
25g flat leaved parsley, chopped
Shavings of Parmesan cheese
Method

1) Put the dried mushrooms in a bowl, pour over enough hot water to cover and leave to soak for 20 minutes. Pop the stock in a pan and keep it at simmering point.

2) Melt the butter in a large pan on a medium heat and add the onion and cook gently for 3-4 minutes, until softened.

3) Add the chicken and cook gently until the pieces are turning lightly golden brown for 4-5 minutes. Add the rice and stir for a minute or so to coat it in the chicken-flavoured butter. Pour in half the white wine and let it bubble for a few minutes to allow the alcohol to evaporate.

4) Meanwhile, drain the porcini and squeeze out any excess liquid. Add the porcini to the rice, along with the fresh mushrooms and stir well. Add the hot stock a ladleful at a time, stirring well between each addition ensuring all the liquid has been absorbed.

5) Add the remaining white wine and let it bubble for a few minutes so the alcohol evaporates. Season with salt and pepper.

6) When the rice is tender and the risotto is thick and creamy remove from the heat and leave to rest for about 30 seconds, before garnishing with the parsley and some shavings of Parmesan cheese.
